Tucked away in a little strip mall across from the Golden Mile lies Skara, 3847 Albert Street, one of Regina’s best-kept secrets. So what is Skara anyways? Well, anyone who has cruised Albert Street before would recognize its luminous black sign, single red stripe and the simple scribe of Skara. Behind its doors lies a dining experience that demonstrates decades of experience with Greek cuisine, homemade pizza and certified AAA Angus Pride steak that one can cut with a fork. “Skara is Regina’s best-kept secret because it offers a great dining experience for everyone,” said Nick Gotsoulias, general manager and part owner of Skara, along with his brothers, Tom and Taso, and his parents, Jim and Helen. “It’s not just fine dining, although it is a classy urban steak house with old school charm. It also has a bit of new world panache, so it’s a little trendier. But it’s still casual dining so everyone feels comfortable when they come here. We have a vast array of clientele, from university students, politicians, doctors and everyday Joes.” “My family and I wanted to create a great place on south Albert that’s local, family owned, and provides a first-class dining experience. Although we’ve only been open for two-and-a-half years, my family has more than 35 years of experience in this business. We’ve used that as the cornerstone for developing Skara.” Although Skara is still new to Regina, their Greek food, steaks and pizzas are fast becoming favourites for many people throughout the city. Helen’s moussaka, a combination of fried eggplant, delicately spiced minced beef, potato and rich béchamel cheese sauce, is very popular. However, the Skara stuffed chicken is Nick’s personal favourite. The free-range organic certified chicken is de-boned, lightly seasoned with fresh herbs, and stuffed with baby spinach and feta cheese. It is then baked in the oven and topped with Skara’s signature lemonato glaze. Every weekend Skara features their prime rib specials. This prime rib is made using AAA Angus Pride and it’s rubbed with Jim’s special seasoning. It’s all made-to-order and topped with the seasoned drippings directly from the prime rib. Skara’s pizza is also something people can’t get enough of. With pizzas such as the Capicola Bruschetta, a Greek/Italian fused pizza made with capicola, baked with cheese, and topped with a finely-chopped Greek salad type of bruschetta. “My father, Jim, is one of Regina’s pizza pioneers,” said Nick. “The hand-kneaded dough, special cheese blend, homemade pizza sauce and hand-cut meats combine to make our pizza one of Regina’s best-kept secrets. We’re here to offer the freshest ingredients available. It’s not just a commitment to excellence, but it’s a passion that my entire family shares.” With Skara’s daily affordable lunch specials and Tuesday night pizza and a pint for only $10, and half price appetizers every Monday anyone can come in to experience the importance of family traditions. They also have a boardroom available that’s great for office meetings, birthday parties, anniversaries and dignitaries. The boardroom offers Skara’s complete menu, as well as a custom, four-course, authentic Greek meal.
