In May 1975, Spiro Gourgaris had a plan. He acquired a piece of land across from the beautiful Kiwanis Park on Montaque Street, north of Regina Avenue. There, he built The Chimney Restaurant and Lounge, and dedicated it to offering Regina residents fine quality food in a comfortable atmosphere.

The welcoming atmosphere of the restaurant is evident with the first glimpse inside the front door, as the customer is greeted with the warm look of a northern hunting lodge. The wood walls give the interior the look of a rustic log building, with high, open beamed ceilings. Soft lighting streams from antique lamps and stained glass panels. Adding to the ambience is the dining room's central fireplace. Tables are tastefully decorated with forest green and burgundy linens.

The restaurant also has a separate dining room for private functions. Up to 75 people can be accommodated in this room, or it can be divided in two for smaller groups.

Another feature of The Chimney is the lounge, a cozy, intimate, setting where groups of friends can enjoy spending time together. The background music is soft, so it is possible to share conversation without shouting over the sound of the music. There is a large screen TV which allows sports fans to get together with friends without missing their favourite game.

The Chimney Restaurant and Lounge is situated just minutes from downtown Regina and is open from 11 am to 11 pm. This allows downtown workers to take advantage of the restaurant's daily lunch and dinner specials. Happy Hour is in effect in the lounge from 2 pm to 7 pm. The entire restaurant, including the washrooms, is wheelchair accessible.

Only a top quality establishment which has built such a solid reputation could be voted one of Regina's 35 most popular restaurants a full 35 years after it arrived in the city.
